Listen in as Mike talks about fishing for a wide variety of species including Atlantic salmon in the hunting and fishing rich paradise of Scotland. Plus, he highlights the sustainability success story of Atlantic salmon in Iceland and his own experiences fishing for them. Mike also discusses diving for Cornish spider crab during the migration each year. These large, spiky crustaceans can grow up to 2-½ feet in claw span and he says their meat is sweet and delicious. Mike hands out a recipe for Spider Crab Linguini and details how he prepares this wonderful dish and notes that viewers can see him prepare it on the show. Mike also talks about fishing for Conger eels over World War One shipwrecks in the English Channel. From a food point of view, he says these large eels are muscly and delicious and can be caught with rod and reel, or if a person is feeling particularly ambitious and brave, they can dive and spear them as well.
Freediving and spearfishing are of real interest to Mike from a sustainability perspective. There is no more sustainable way of fishing, he says, you aren't casting a hook and seeing what comes up, you are actually hunting underwater. As a hunter, gather and wild game chef, he always champions cooking with wild and sustainable ingredients and that mentality also extends into the method by which he harvests those ingredients. After the catch, he emphasizes the importance of proper meat care in order to make your food as good as it can possibly be. Mike explains why you should bleed your fish immediately after the catch, how to get them cooled down quickly and also why a rest period of 24 to 48 hours on the bone makes for the best fish from a culinary point of view.
