What you need:
- 2-3 lbs of venison, grilled and sliced thin
I like to use loins or tenderloins, but really you can use about any cut that isn’t super thick, a cut that will be bite tender for a sandwich.
For this sandwich I like an Onion Bun. It’s basically a burger bun with some added flavor on top. However, any bun will do, pick what you like!
I like Burger Leaf Lettuce, but regular lettuce, spinach or anything green will work.
This sandwich is great with a variety of flavors. I use Hi Mountain Seasonings and their Steak Rub, Venison Rub or Brisket & Prime Rib Rub, because they are all excellent choices here.
Someone burn the mayo, I loathe that stuff. However, I am a big fan of mustard, so I used a whole grain garlic mustard and a little bit of horseradish.
Whip it up:
Coat your venison with olive oil and then apply your Hi Mountain Seasoning Steak Rub evenly. The steak seasoning creates an awesome crust on your meat, it is superb!
Personally, I like to grill over charcoal. So, once preheated, I toss my venison on the grill and cook it until it’s rare to medium rare, which is about 130-140 degrees. Over cooking venison is probably the biggest mistake hunters make so if you are unsure of cook times, invest in a meat thermometer and keep an eye on your meat as it grills.
Once you pull your venison of the grill, let it rest for a few minutes and then thinly slice it.
Take your buns and place them on the grill and allow them to toast for a minute. When you pull them off dress the top bun with a healthy smear of the whole grain garlic mustard. On the bottom bun, place your lettuce and then pile your meat as high as you like. A tasty addition to this meat stack is crispy onions. If you happen to be a fan of horseradish, now is the time to add a small dollop to the top, as well.
Depending on how high you stack the meat, this should make 6 decent sized sandwiches.
Voila! Now you have a fabulous Grilled Venison Sandwich that takes less than 10 minutes to makes and I promise, it’ll be your absolute new favorite!
