Scott Leysath is a leading authority on the proper preparation of fish and game. If you can hunt it or catch it, he can cook it. For years Scott has taught people the basics of cooking delicious wild game dishes through his cookbooks and "The Sporting Chef" television show. However, he has also brought to the forefront an awareness of the lesser known and even lesser eaten species with his show, "Dead Meat". "Dead Meat is about finding interesting people who have a passion for making some of the ugliest critters taste delicious. They're passionate about getting the most from the creatures and the parts of animals less eaten," Scott says.
